Pie of potato, cheese and sesame

It is very easy to prepare this cake of potatoes, cheese and sesame, ideal to feed the entire tribe and great for family gatherings, such as Father's Day, and it is so simple to do, that for any day of the week, it is perfect.

This is a recipe adapted from my great-grandmother, a very beautiful are quipeña who lived more than 100 years. She was famous in my house for the potatoes with cheese and Ocopa that she prepared (someone else is salivating!). My grandmother learned to prepare them and my mother also. They were like potato sandwiches, in the middle there were slices of fresh cheese and they were covered with beaten egg. They were DELIS!! At my mom's house, Flor, her right and left hand, prepares this version that we all love and share today in the blog.

This delicious potato, cheese and sesame cake have 3 types of cheese:

  1. fresh cheese,
  2. Mozzarella cheese and
  3. Paria cheese (Andean cheese)

These 3 types of cheese that are used for this delicious potato cake, is what makes it extra creamy. It has toasted sesame seeds to give that "crunchi" touch to each bite. There are people who throw anise on the potato cake, but I'm not a fan of anise, I prefer sesame.

I recommend you use the cheeses you like the most, you can use Manchego cheese, goat cheese, Cheddar cheese, Gouda cheese, Edam cheese, there are so many types of cheeses so rich and delicious. This is the version of my family and everyone fascinates us, big and small, it is also a very healthy, nutritious, gluten-free online cake in Dehradun and surrendering option.

They can serve as a starter, with a rich chili sauce or salad (this salad is goodness - see recipe here), or as an accompaniment to a meat or chicken, (such a baked chicken - see recipe here).

Be sure to make a large platter (double recipe) if the entire tribe comes to lunch. You can prepare this potato cake the day before, it is even richer for the day you are going to eat, all the flavours are mixed and absorbed in the potatoes.

The recipe

PIE OF POTATO, CHEESE AND SESAME

Serves 6

Prep Time: 30 min

Cook Time: 50 min

Total Time: 1 hr 20 min

Ingredients

  • 1 kilo of white potato
  • 150 grams of fresh cheese
  • 150 grams of mozarella cheese
  • 100 grams of Andean cheese or Paria cheese
  • 6 eggs
  • ¾ cup of fresh milk
  • 1 - 2 tablespoons sesame seeds
  • salt and pepper to taste
  • butter to grease the mold

Instructions

  • Grease with butter, a refractory mold approximately 20 x 30 cm. Reserve
  • Peel and cut the potatoes into thin slices. Cook them in plenty of water and remove them from the fire just before they are fully cooked, because they finish cooking in the oven. Let them drain and cool.
  • Grate the mozzarella cheese and the fresh cheese. Reserve.
  • Cut the Andean cheese into thin slices. Reserve.
  • In the mold, place a layer of potatoes, cover with a bit of fresh cheese, mozzarella and Andean cheese. Cover with another layer of potatoes. Repeat this process until finishing with a layer of cheeses.
  • In a bowl, beat the eggs, fresh milk, salt and pepper. Pour this mixture over the potatoes.
  • Sprinkle with sesame and bring to hot oven in 180C or 350F for approximately 50 minutes or until the mixture has set and has a golden color.

Notes

  • Use white potatoes, the yellow potatoes are undone, for this recipe I used papa Yungay.
  • To give it a super-rich flavor and touch, you can add 1 teaspoon of ground garlic to the eggs and beat together with the milk.
  • If you do not want to use sesame, sprinkle parmesan cheese.
  • You can use Manchego cheese, goat cheese, Cheddar cheese, Gouda cheese, Edam cheese or the one you like the most.
  • You can make a large mold or also in individual molds.
  • It stays in the refrigerator for up to 3 days.
